Here’s the recipe for the winning chili recipe. I guess it’s Hawaiian because it’s a dupe of a chili served at a Hawaiian fast food chain called Zippy’s. I hope you enjoy!
Hawaiian Chili
Ingredients:
1. 1LB ground beef (80/20)
2. 10oz Portuguese sausage finely chopped
3. 3 slices thick cut bacon finely chopped
4. 1 cup celery finely chopped
5. 1 cup white onion finely chopped
6. 1/3 cup yellow bell pepper finely chopped
7. 2 Tbsp chili powder
8. 1/2 Tsp cumin
9. 1/2 Tsp oregano
10. 1/2 Tsp smoked paprika
11. 1 can chili beans (undrained) – I used Bush’s
12. 1 can kidney beans (undrained)
13. 2 8oz cans of tomato sauce
14. 1 can chicken broth
15. 1 bay leaf
16. 1/2 Tsp light brown sugar
17. 1 Tsp red wine vinegar
18. salt and pepper to taste
19. Final ingredient, add right before serving – 3 Tbsp mayonnaise (I used Dukes)
Steps:
1. Brown ground beef and drain excess fat
2. Add bacon and sausage and render until bacon is cooked
3. Add celery, onion, bell pepper and sweat until onions are translucent
4. Add chili powder, cumin, oregano and paprika and heat until fragrant
5. Add remaining ingredients EXCEPT mayo. Bring to boil, reduce to simmer. Simmer partially covered for at least 20 mins
6. Right before service add mayonnaise and stir thoroughly Serve with a scoop of white rice.
